Caviar is the delicacy which was once not long ago limited to only those of immense wealth. Today it is an experience which we all can enjoy at least once in our lives. It is only noteworthy to appreciate that one of the best caviars known to the world is the beluga sturgeon found mostly in the Caspian Sea and the Black Sea basin. Though it is said to be one of the most expensive caviars, it is well worth the cost.

The beluga caviar is soft and clear with sheen, roughly about the size of a pea. If one gazes a little close, one can expect to find a small dark dot which is the egg itself within the clear surroundings. Color ranges from light silver-gray to black.

Sturgeon caviar is mostly dwindling in numbers due to their over fishing. The beluga sturgeon is also one which is most looked out for and fished excessively due to the demand. It takes a good long 20 years for the blue sturgeon to mature and yet the numbers are being depleted through excessive fishing in order to keep up to the demand for the roe. The beluga sturgeon is considered by many as an endangered species and on the near brink of extinction. Due to this status, there have been restrictions placed onto the capture and sale of beluga caviar in most countries apart from Iran. Because of the drop in availability, prices for beluga roe have skyrocketed.

The only way to access good beluga caviar is through fisheries in Kazakhstan. Beluga can be bought there for a considerably affordable price with the same quality and quantity as in the United States where the price is greater by a hundred times at least. Since the country does not believe in online transactions, sales continue through tourists who are eager to buy it in person and take home a small stock.

A number people who visit Central Asian tend to look out tasting the beluga caviar at local fine dinning. So if you have a visit planned to this region, do not forget to take time out for the beluga caviar. The fact that the prices are considerably lower also allows them to satiate their taste buds. In case you experience any difficulty in finding a suitable restaurant, you can always inquire from friends and local tourist guides who would be happy to guide you in your quest. However avoid purchasing in bulk or attempt to bring beluga caviar back home as this may land you with trouble with the local custom officials.

Last but not the least, with beluga caviar, one should avoid any waste through experimentation. The best way to serve is on gold toasted buttered bread while making sure the bread is soft. Spread unto the bread with non-metallic utensils as metal alters the taste. Bone and mother-of-pearl are highly recommended, however even disposable plastic spoons would suffice. Beluga Caviar is best served with Champagne or Vodka to further stimulate the palate.
